What You’ll Need
- 2 boneless pheasant breasts, cut into small bite-size pieces
- 1 tablespoon olive oil
- Kosher salt and black pepper
- 1 prepared 12-inch pizza crust or 1 pound pizza dough
- 4 slices bacon, cooked crisp and chopped
- 1 1/2 cups shredded whole-milk mozzarella
- 1/3 cup finely grated Parmesan
- 2 tablespoons sliced green onion, optional
- For the white sauce: 2 tablespoons butter
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 3/4 cup whole milk
- 1/4 cup heavy cream
- Pinch of salt and black pepper
How to Make It
- Heat oven to 475°F with a pizza stone or heavy sheet pan inside if you have one.
- Season the pheasant lightly with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the pieces for about 60 to 90 seconds, just until the outside loses its raw color. Remove immediately; the pheasant will finish cooking on the pizza.
- For the white sauce, melt butter over medium heat. Add garlic and cook about 30 seconds. Whisk in flour and cook 1 minute. Slowly whisk in milk and cream. Simmer until lightly thickened, 2 to 3 minutes. Season with salt and pepper.

Bacon-Wrapped Pheasant Jalapeño Poppers

What You’ll Need
- 2 boneless pheasant breasts, sliced into 12 strips
- 6 jalapeños, halved lengthwise and seeded
- 6 ounces cream cheese, softened
- 6 slices bacon, halved crosswise
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Kosher salt and black pepper

How to Make It
- Heat grill for two-zone cooking or heat oven to 400°F.
- Season pheasant strips with garlic powder, smoked paprika, salt and pepper.
- Fill each jalapeño half with cream cheese. Lay a strip of pheasant over the cheese and wrap with half a slice of bacon. Secure with a toothpick.

- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 teaspoon kosher salt
- 1 teaspoon garlic powder

- 1/2 teaspoon black pepper
- Neutral oil for frying
How to Make It
- Place pheasant pieces in buttermilk for 30 minutes to 2 hours in the refrigerator.
- Combine flour, salt, garlic powder, paprika and pepper in a shallow bowl.
- Heat 1/2 inch of oil in a heavy skillet to about 350°F.
- Lift pheasant from the buttermilk, let excess drip away, then coat well in seasoned flour.
- Fry in small batches until crisp and the centers reach 165°F, usually 2 to 3 minutes per side. Drain on a rack and serve immediately.
Small, evenly sized pieces are the key. Pheasant breast cooks quickly, so pull the bites as soon as they are done.
Warm Pheasant & Green Chile Dip

How to Make It

How to Make It
- Heat oven to 375°F. Season pheasant and sear in olive oil over medium-high until cooked to 165°F. Rest 5 minutes, then chop into small pieces.
- Slice the slider rolls horizontally as one slab and place the bottoms in a baking dish.
- Layer cheese, chopped pheasant and bacon over the rolls. Add the top slab.
- Stir ranch seasoning into melted butter and brush over the tops.

This is a good use for leftover cooked pheasant breast too. Just skip the first searing step and warm the chopped meat in the sliders.

- 2 boneless pheasant breasts, cut into bite-size pieces
- 2 tablespoons butter
- 1 small yellow onion, diced
- 2 carrots, diced
- 2 celery ribs, diced
- 2 cloves garlic, minced
- 1/3 cup all-purpose flour
- 5 cups chicken stock
- 2 cups cooked wild rice
- 1 cup half-and-half
- 1 teaspoon dried thyme
- Kosher salt and black pepper
How to Make It
- Melt butter in a Dutch oven over medium heat. Add onion, carrot and celery and cook until softened, 6 to 8 minutes. Add garlic and thyme and cook 30 seconds.
- Sprinkle in flour and stir for 1 minute. Slowly add stock while stirring. Bring to a gentle simmer and cook until slightly thickened.
- Add wild rice and pheasant pieces. Simmer gently just until pheasant reaches 165°F, about 5 to 7 minutes depending on the size of the pieces.
- Reduce heat to low and stir in half-and-half. Warm through without boiling. Season to taste.
Add the pheasant near the end. Long simmering is what turns lean breast meat dry.

- 2 1/2 cups chicken stock
- 4 tablespoons butter
- 1 small onion, diced
- 2 carrots, diced
- 2 celery ribs, diced
- 1/3 cup all-purpose flour
- 1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
- 3/4 cup frozen peas
- 1/3 cup heavy cream
- Kosher salt and black pepper
- 1 refrigerated pie crust or sheet of puff pastry for the top
How to Make It
- Heat oven to 400°F.
- Bring stock to a gentle simmer. Add pheasant and poach for 3 minutes. Remove the meat with a slotted spoon and reserve the stock.
- Melt butter in a deep skillet. Cook onion, carrot and celery until softened. Stir in flour and thyme and cook 1 minute.
- Gradually whisk in reserved stock. Simmer until thickened. Stir in cream and peas, then remove from heat and fold in the pheasant. Season to taste.

- 1 pound boneless pheasant breast, cut into bite-size pieces

- 1 can (14.5 ounces) diced tomatoes
- 5 cups chicken stock
- 1 cup frozen corn
- 1 can black beans, drained and rinsed

- Season pheasant lightly. Heat olive oil in a soup pot over medium-high and brown the pieces briefly. Transfer to a plate.
- Lower heat to medium. Add onion and cook until softened. Add garlic, cumin and chili powder and stir 30 seconds.
- Add tomatoes, stock, corn, beans and green chiles. Simmer 15 minutes.

- Add onion, carrots and celery to the pot and cook 5 to 6 minutes. Add garlic and thyme for 30 seconds.
- Pour in stock and simmer until vegetables are nearly tender, about 12 minutes.
- Add noodles and cook according to package timing.
- Return pheasant during the final 4 to 6 minutes and cook until the breast pieces reach 165°F. Season and finish with parsley.
The noodles need more time than the pheasant. Cook them first and bring the meat back only at the end.
Pheasant & Dumplings

What You’ll Need
- 1 pound boneless pheasant breast, cut into bite-size pieces
- 2 tablespoons butter
- 1 small onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 1/4 cup all-purpose flour
- 6 cups chicken stock
- 1/2 cup whole milk
- 1 teaspoon dried thyme
- 2 cups biscuit baking mix
- 2/3 cup milk for dumplings
- Kosher salt and black pepper
How to Make It
- Season and quickly brown pheasant in 1 tablespoon butter, then transfer to a plate.
- Add remaining butter, onion, carrots and celery. Cook until beginning to soften. Sprinkle in flour and stir 1 minute.
- Slowly add stock, then 1/2 cup milk and thyme. Simmer 10 minutes.
- Stir biscuit mix with 2/3 cup milk just until combined. Drop spoonfuls over the gently simmering broth, cover and cook according to the biscuit mix timing without lifting the lid.
- Return pheasant for the final few minutes and simmer gently until it reaches 165°F. Season before serving.
Do not boil hard after the pheasant goes back in. A gentle simmer is enough to finish the breast without toughening it.
Creamy Pheasant Corn Chowder
Pheasant breast, potatoes and sweet corn in a thick, savory chowder built for cold weather.
What You’ll Need
- 1 pound boneless pheasant breast, cut into bite-size pieces
- 4 slices bacon, chopped
- 1 small onion, diced
- 2 medium Yukon Gold potatoes, diced small
- 4 cups chicken stock
- 2 cups corn kernels
- 1 cup half-and-half
- 2 tablespoons all-purpose flour
- 1/2 teaspoon dried thyme
- Kosher salt and black pepper
How to Make It
- Cook bacon in a soup pot until crisp. Transfer bacon to a plate, leaving about 1 tablespoon drippings in the pot.
- Season pheasant and brown quickly in the drippings. Transfer to the plate with the bacon.
- Add onion and cook until softened. Add potatoes, stock and thyme and simmer until potatoes are tender.
- Whisk flour into half-and-half until smooth. Stir into the soup with corn and simmer until lightly thickened.
- Return pheasant and bacon and cook gently until the pheasant reaches 165°F. Season and serve.
Small potato cubes keep the cook time reasonable so the pheasant can stay out of the pot until the final minutes.
Creamy Pheasant Marsala

What You’ll Need
- 4 boneless pheasant breasts, lightly pounded to even thickness
- Kosher salt and black pepper
- 1/2 cup all-purpose flour for dredging
- 2 tablespoons butter
- 1 tablespoon olive oil
- 8 ounces cremini mushrooms, sliced
- 2 cloves garlic, minced
- 3/4 cup Marsala wine
- 3/4 cup chicken stock
- 1/2 cup heavy cream
- Chopped parsley for serving
How to Make It
- Season pheasant with salt and pepper and lightly dredge in flour, shaking off excess.
- Heat butter and oil in a wide skillet over medium-high heat. Brown pheasant about 1 1/2 to 2 minutes per side. Transfer to a plate.

- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup Italian-style breadcrumbs
- Olive oil for shallow frying
- 2 cups warm marinara sauce
- 1 cup shredded mozzarella
- 1/3 cup grated Parmesan
- Kosher salt and black pepper
How to Make It
- Heat oven broiler and warm marinara.
- Season pheasant. Dredge each breast in flour, then egg, then breadcrumbs.
- Heat a thin layer of olive oil in a skillet over medium-high heat. Fry pheasant until golden on both sides, working in batches if needed.

- 1/2 lemon
How to Make It
- Pat pheasant dry and season on both sides.
- Heat oil and 1 tablespoon butter in a heavy skillet over medium-high heat.
- Sear pheasant until browned, about 2 minutes on the first side and 1 to 2 minutes on the second.
- Lower heat. Add remaining butter, garlic and herbs. Tilt the pan and spoon the foaming butter over the breasts until they reach 165°F.
- Transfer to a plate, squeeze over a little lemon and rest 5 minutes before slicing.
Use a thermometer. This recipe is intentionally fast, and that is exactly why the breast stays tender.

- Heat oil in a skillet over medium-high heat. Sear pheasant about 2 minutes per side and transfer to a plate.
- Lower heat to medium. Add butter, mushrooms and shallot. Cook until browned and tender.
- Add stock and scrape up browned bits. Simmer until reduced slightly. Stir in cream and herbs.
- Return pheasant to the pan and cook gently until it reaches 165°F. Serve over wild rice or mashed potatoes.
This is the familiar cream-of-mushroom idea, but fresh mushrooms and a quick pan sauce make it much better.
Herb-Marinated Grilled Pheasant

What You’ll Need
- 4 boneless pheasant breasts
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon chopped rosemary
- 1 teaspoon chopped thyme
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
How to Make It
- Whisk olive oil, lemon juice, garlic, rosemary, thyme, salt and pepper.
- Add pheasant and marinate in the refrigerator for 1 to 3 hours. Do not leave it in the acidic marinade all day.
- Heat grill to medium-high and oil the grates.
- Remove pheasant from marinade and grill over direct heat, turning once, until nicely marked and the thickest part reaches 165°F, usually about 4 to 5 minutes per side depending on thickness.
- Rest 5 minutes before slicing.
If the breasts vary a lot in thickness, lightly pound the thicker end before marinating so all four finish together.
